Arroz Con Cerdo
8 slices of bacon, cooked crisp, drained, crumbled
2 lb. boneless, lean pork, cubed
1 lg. onion, chopped
1 clove garlic, minced
2 c. raw rice
6 c. chicken broth
1/4 tsp. crushed saffron
a 10 oz. pkg frozen peas, cooked, drained, and buttered
Brown pork in the same skillet you cooked the bacon in. Use some bacon
drippings if needed. (Brown the pork a little at a time, removing it
as it browns.) In same skillet, add 2 T. of the bacon drippings. Saute
the onion and garlic till soft. Add raw rice and saute till golden,
stirring constantly. Add broth and saffron. Bring to boil. Pour in
12 c. baking dish. Top with browned pork. Cover and bake at 350degF
for 1 hr. or till liquid is absorbed and rice is tender. Fluff with a
fork. Sprinkle bacon and peas over the dish and serve at once.
This is very easy and good. Please don't omit the saffron!
